Meal Plan: Winter 2015 Week 4

Even though a little cold seems to be making its way through my family, it is has still been a great week around here.  We are trying out a new parenting trick that seems to be working out pretty well; we purchased a large jar and enough marbles to fill it up, and the kids earn adventures when they hit certain markers.. the final adventure being Disneyland.  Before the “marble jar” we sometimes had a hard time motivating the kids to do their chores,  finish dinner, or share but they love earning their marbles now and hate having them taken out for bad behavior.  I hope it continues to work because it is definitely making my life a little easier, including meal times. The kids have been eating up all their meals, clearing their plates, and even helping with the dishes sometimes. It is wonderful.  And so is this week’s meal plan, it includes a refreshing citrus + greens salad, lentil spaghetti, roasted bell pepper quesadillas, back bean tacos and black eyed pea stew. Ingredients: dried lentils, olive oil, carrots, onion, red bell pepper, garlic cloves, dried thyme, dried oregano, salt and pepper, tomato paste, red wine, whole peeled tomatoes, spaghetti, parmesan.

I think this pasta is delicious! My family likes it too although my daughter’s friend who came over for dinner this week is not a fan of the “beans” in the sauce.  This recipe is extremely filling and makes great leftovers.

Ingredients: pink grapefruit, blood oranges, naval orange, shredded romaine, celery, flat leaf parsley, avocado, lemon, olive oil, salt and pepper, salty roasted cashews.

I cannot get enough of the citrus from the farmers market this season… AMAZING.   Unfortunately, no matter how hard I try to enjoy grapefruit I still don’t really like it and ended up picking it out of this salad. I love the presentation of this salad and how refreshing it is.

I pride myself in trying all the recipes I post in my meal plans, but this week unfortunately I didn’t get around to making this dish. I caught a cold and even though I had all the ingredients in my kitchen to make this dish (and it probably would have helped me feel better) we ate In and Out instead.  And it was delicious.  But this recipe looks good to me and hopefully I’ll get around to making it soon… if you make it let me know how it turns out.

Ingredients: sprouted grain tortillas, pepper jack cheese, olive oil, bell pepper, yellow onion, avocado, salt and pepper.

I doubled this recipe in the grocery shopping list and maybe should have tripled it because these quesadillas are wonderful.  Quesadillas, especially vegetarian quesadillas, are always such a quick, easy and satisfying meal that even the kids enjoy. I decided to leave the avocado out of the quesadillas and mixed them with fresh salsa for dipping.

Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes

Ingredients: black beans, fresh salsa, cumin, olive oil, limes zest and juice, green cabbage, green onions, corn tortillas, feta, avocado, hot sauce.

I love tacos, especially vegetarian tacos and these are no exception; I’m sure I will be making them again in the future.  I don’t normally think to add feta to tacos but they are a great addition.
