Healthy Dinner Recipes: Winter 2016 Week 11

Every Monday I post five colorful, veggie-filled healthy dinner recipes with a free printable color-coded grocery shopping as part of my Meal Plan Monday Series. Each recipe is inspired by a color of the rainbow, encouraging you to eat the unique nutrients available from a colorful menu. I’ve been doing this since 2012 and I enjoy sharing tried and true recipes with you!

This week I have five great healthy dinner recipes that I think you will love and will help you eat the rainbow: sweet potato chili from A Cedar Spoon, butternut squash enchiladas from How Sweet Eats, prosciutto and caramelized onion pizza from Handle the Heat, minestrone from The Roasted Root, and roasted potato salad from yours truly.

Healthy Dinner Recipes

Sweet Potato Chili Recipe in Free weekly meal plan with shopping list | Rainbow Delicious

Sweet Potato Chili from A Cedar Spoon

Prep Time: 15 minutes Cook Time: 40 minutes Total Time: 55 minutes

Ingredients: olive oil, sweet potatoes, red bell pepper, sweet onion, jalapeno garlic cloves, cumin, chili powder, salt, ground pepper, cayenne, roasted tomatoes, diced tomatoes, tomato sauce, corn, black beans, toppings: cheese, salsa, sour cream, cilantro, green onions, avocados.

Chili is always a good idea in my opinion! I used an entire bell pepper instead of just half, forgot to buy a jalapeno so I left that out, and I didn’t add cayenne. We topped this delicious chili with sour cream, cilantro and avocados.

Butternut Squash Enchiladas from How Sweet Eats

Prep Time: 30 minutes Cook Time: 25 minutes Total Time: 55 minutes

Ingredients: butternut squash, sweet onion, garlic cloves, sage, olive oil, salt, pepper, nutmeg, beans (cannellinis), brown butter, fontina cheese, unsalted butter, flour, stock, milk, whole wheat tortillas.

I love this unique take on enchiladas with a creamy fontina cheese sauce combined with butternut squash and sage. I used cannellini beans and thought these were fab!

Caramelized Onion, Goat Cheese and Prosciutto Pizza from Handle the Heat

Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes

Ingredients: pizza dough, olive oil, goat cheese (or ricotta), caramelized onion, prosciutto, rosemary, balsamic vinegar, salt and ground pepper.

We have continued to have pizza and movie night on Friday nights and this one was particularly delicious! It has a great combination of sweet and salty with the caramelized onions and prosciutto. I used ricotta instead of goat cheese. I feel like I keep getting better and better at pizza-making with each new week- my latest discovery is to put my pizza stone closer to the top of the oven- it makes for a crisper crust (sometimes mine run too soft).

Roasted Potato Salad with Arugula and Feta from Rainbow Delicious

Prep Time: 5 minutes Cook Time: 30 minutes Total TIme: 35 minutes

Ingredients: fingerling potatoes, arugula, feta, rosemary, garlic cloves, olive oil, white balsamic, freshly cracked pepper, sea salt.

If you haven’t tried roasted potatoes in a salad yet now is the time! Roasting potatoes are delicious, especially when you add rosemary and garlic, and are worth the thirty minutes of prep!

Minestrone Soup is a healthy dinner recipe and part of weekly meal plan and grocery list series | Rainbow Delicious

Minestrone from The Roasted Root

Prep Time: 10 minutes Cook Time: 45 minutes Total Time: 55 minutes

Ingredients: olive oil, yellow onion, carrots, celery, red potatoes, garlic, basil, oregano, thyme, sage, diced tomatoes, broth, quinoa, parmesan cheese with rind, kidney beans, cannellini beans, green beans, salt.

Sometimes minestrone soups can be a little bland, but this recipe is full of flavor and makes great leftovers. I used fresh green beans instead of cans and left out thyme. Tastes great with some crusty bread and butter.
