 This week I’m really excited to share an eating healthy meal plan from Get Healthy U. I know I’m always trying to make eating healthy a priority by incorporating colorful, produce-filled recipes into my days and if you are too then you will love this week’s recipe inspiration + grocery shopping list.

I’d like to introduce you to Chris Freyteg, the founder behind the site Get Healthy U:

This recipe uses summer squash and zucchini instead of pasta noodles which is perfect for people focusing on healthy eating! If you haven’t tried them yet they are surprisingly filling and a great way to use up extra squash if you happen to garden and have them growing like crazy!  I use my paderno spiralizer but there are lots of awesome spiralizers out there! (My sister loves her Inspiralizer and this is a simple low-cost beginner spiralizer).

Mediterranean Chicken with Potato Noodles

Another recipe to make with a spiralizer! This recipe uses potatoes instead of the more popular zoodle pasta and I wonder if sweet potatoes would work for this recipe too? If anyone tries that let me know what you think!

  4. wow these are some really great healthy recipes and they look stunning. I love to eat super healthy most of the time but I have to confess that I mix it up with some pretty decadent and sinister foods… well it just makes me focus on what my next healthy meal will be ??

    • Thank you Dahn! I can totally relate- I try to eat healthy but I also really love food and indulge occasionally too!
