I’m excited to share with you this winter dinner recipes meal plan with Gather & Dine. I don’t know about you but with all of this cold weather I am just craving comfort food! So this week’s Monday meal plan is full of comfort food: pizza, soup, lasagna, and a polenta bake. I threw in a salad too to lighten things up at least a little. Winter Dinner Recipes Meal Plan with Gather & Dine
Sausage and Pepper Polenta Bake from Gather & Dine
Prep Time: 40 minutes Cook Time: 30 minutes Total Time: 1 hour 10 minutes
Ingredients: polenta, water, milk, sea salt, parmesan, unsalted butter, olive oil, garlic, yellow pepper, red onion, Italian sausage, tomato sauce, oregano.
This is a great gluten free option for people who are avoiding grains and is filled with flavor. My kids love sausage which balances out their distrust of peppers. Also, I love the white baking dish she used for this, it looks similar to this one that is on my wish list!
Cannellini Vegetable Soup with Parmesan Toasts from Gather & Dine
Ingredients: cannellini beans, garlic cloves, sage, rosemary, olive oil, onions, celery, carrots, thyme, zucchini, broth, swiss chard, green cabbage, crushed tomatoes, salt, olive oil, baguette, parmesan.
This soup is perfect comfort food for this cold weather and makes great leftovers. It is full of veggies which I love and herbs making it both hearty and delicious.
Cremini Fontina Pizza from Gather & Dine
Ingredients: garlic cloves, red pepper flakes, olive oil, red onion, cremini mushrooms, mozzarella, fontina, parsley, pizza dough.
We have been making a lot of pizzas lately at our house. In the summer we make our pizzas on our grill but in the winter I do it in our oven, either way we use our trusty pizza stone, do you use one too?. This pizza is simple but has great flavors!
Pesto Chicken Lasagna from Gather & Dine
Ingredients: unsalted butter, flour, whole milk, pesto, salt and pepper, chicken breasts, olive oil, lasagna, ricotta, egg, parmesan, dried parsley, mozzarella.
Is there anything better than creamy chicken pesto? I don’t know. This is rich and pairs nicely with the salad that is next in the line-up. The recipe calls for roasting chicken but you can also just use your preferred method of cooking chicken and add it shredded to the dish (I prefer to saute mine).
Beets Shallot and Feta Mixed Greens Salad from Gather & Dine
Ingredients: beets, shallots, olive oil, salt, pepper, mixed greens, feta, olive oil, balsamic, dijon, salt and pepper.
This is a perfect fresh winter salad! I cheat by buying the pre-cooked beets from Trader Joes which aren’t as good as cooking them yourself but get they get the job done.

Wow, this looks like such a varied meal plan, and so much yummy comfort food for January (the frost didn’t clear here in York UK until into the afternoon today). That soup has me almost reaching for my dressing gown and blanket.
