When I’m not cooking breakfast or reading cookbooks, I love to dig in my rooftop veggie garden, practice yoga, ride my bike, and drink good coffee. And there’s nothing I love more than sharing a homecooked meal with family and friends.”

Weeknight Breakfast for Dinner Ideas
Black Bean Breakfast Enchiladas
Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes
Ingredients: olive oil, onion, diced tomatoes, black beans, cumin, garlic powder, flour, eggs, butter, flour tortillas, enchilada sauce, cheddar cheese, green onion, cherry tomatoes, avocado slices.
I’m a huge fan of enchiladas and if you are too consider following my pinterest enchilada board! These vegetarian breakfast enchiladas seem unique to me and I love the addition of eggs. I use enchilada sauce from Trader Joe’s.
Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes
Ingredients: sweet potato, rolled oats, milk, eggs, butter or olive oil, baking powder, salt.
These gluten free waffles would be a perfect way to use up leftover sweet potato. You can use any kind of milk- almond, cashew, or regular. These waffles would be great topped with an egg and with sausage and avocado on the side like pictured.
Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes
Ingredients: flour, baking powder, nutmeg, eggs, fresh ricotta, granulated sugar, lemon zest, vanilla, milk, butter, maple syrup, strawberries.
These lemon ricotta pancakes are perfect for when the craving strikes to have pancakes for dinner. If you can’t find strawberries since we are heading into Fall produce you can substitute with pomegranate.
Spinach and Goat Cheese Quiche
Prep Time: 30 minutes Cook Time: 55 minutes Total Time: 1 hour 24 minutes
Ingredients: flour, salt, unsalted butter, eggs, half and half, baby spinach, goat cheese, salt and pepper.
Spinach and goat cheese works together to make this delicious quiche. You can follow the instructions to make the flakey crust or if you are short on time you can buy pre-made pie crust (I often get mine at Trader Joe’s). I think this quiche would be amazing if you add a little caramelized onions to it as well.
Prep Time: 15 minutes Cook Time: 45 minutesTotal Time: 1 hour
Ingredients: olive oil, sweet potato, salt and pepper, eggs, spinach, deli ham, basil.
This paleo-friendly sweet potato spinach frittata is filled with flavor simple to prepare. You can use prosciutto instead of deli ham and if basil is not easy to find you could top with avocado or another herb instead!
