It’s June! School’s out for the summer and it’s time to party! Summer is busy, fun and tiring so I’m here to help you out in the recipe inspiration and meal planning department. I’ve compiled five seasonal, healthy delicious June recipes that you need to try and I’ve attached a shopping list to go with it to make your summer meal planning as simple as possible! The line up includes cherry quesadillas, burrata & fresh produce tarts, cilantro and corn soup, strawberry avocado salad, and a summer linguine, all from amazing food bloggers.

June Recipes You Need To Try
Cherry, Brie & Bacon Quesadillas from Use Your Noodles
Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes
Ingredients: tortillas, cherries, brie, bacon, arugula, chili flakes, balsamic vinegar.
I am loving cherry season lately, what about you?! I can’t get enough and whenever I’m driving and see a cherry stand I simply have to stop and then binge eat them until they are gone… and then of course I have to go buy more so I can roast and stuff them in a delicious summer quesadilla. I love adding fruits into savory dishes and the combo of brie, bacon, arugula and cherries is brilliant! The conversion from 175ºC is roughly 350ºF for roasting the cherries and bacon.
Burrata Puffed Pastry Squares with Summer Produce from My Kitchen Love
Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes
Ingredients: puff pastry, burrata cheese, egg, salt and pepper. Toppings: peach and mint,tomatoes and basil, zucchini and thyme, fig and honey, cucumber and oregano.
Who doesn’t love puff pastry? These cute pastry squares are such a perfect light and enjoyable summer dinner. You could definitely pack them up to bring on a picnic or enjoy them with friends for a summer lunch. And there are endless topping possibilities! I especially love peach with mint and tomatoes and basil.
Cilantro and Sweet Corn Soup from Eat Healthy Eat Happy
Prep Time: 15 minutes Cook Time: 35 minutes Total Time: 50 minutes
Ingredients: olive oil, chili powder, red pepper flakes, cumin, onion, garlic, corn, poblano pepper, roma tomatoes, {almond} milk, salt, lime, pepper, maple, water, cilantro.
Corn and cilantro are two of my favorite summer flavors and so I was obviously drawn to this summer soup and knew I would include it in my June recipes. If you can’t locate a poblano pepper just use a bell pepper as a substitute. I use regular whole milk instead of almond but love that this soup is vegan friendly for vegan friends!
Strawberry Avocado Mozzarella Salad from Swanky Recipes
Prep Time: 5 minutes Total Time: 5 minutes
Ingredients: spinach, avocado, strawberries, raspberries, mozzarella, olive oil, red wine vinegar, lemon juice, balsamic vinegar, salt, pepper, basil.
This is pretty much my ideal summer salad- mozzarella, avocado, fruit, spinach, a squeeze of lemon… YUM! You can’t go wrong with this as an awesome dinner side or a light meal. I love the combination of avocado and fruits, it is gorgeous in presentation and so delicious!
Linguine with Summer Vegetables from Veggies Don’t Bite
Prep Time: 15 minutes Cook Time: 30 minutes Total Time: 45 minutes
Ingredients: corn, kale, leeks, zucchini, cherry tomatoes, rosemary, garlic, white cooking wine, olive oil, olive oil or veggie broth, salt and pepper, linguine.
I love feeding my family pastas because even when they are in picky moods they will usually eat pasta without complaining. I love that this pasta includes the star summer veggies: zucchini, corn and tomatoes. I feel like you could definitely garnish this dish with a little fresh parmesan!
