This week’s meal plan Monday includes a menu of five healthy meal ideas from Love and Zest and I think you are going to love them. Kristina, the creator of Love and Zest, is a sports dietitian and food photographer, first time mom to baby boy, and NFL agent’s wife living in Florida. On Love & Zest you’ll find {mostly} healthy recipes, fitness, and nutrition to fuel your active lifestyle.

Kristina started cooking when she got married.. and had lots of pots and pans in the kitchen that I needed to learn how to use. She received a few cookbooks as wedding gifts and started watching cooking shows and that’s when she discovered food blogs! She figured she’d share about her journey of learning how to cook and being in school to become a dietitian on a blog of her own! And Love & Zest was born.

Healthy Meal Ideas from Love and Zest Meditteranean Quinoa SaladMediterranean Quinoa Chicken Salad

Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes

Ingredients: chicken breast, olive oil, red onion, mushrooms, quinoa, red bell pepper, English cucumber, chickpeas, walnuts, spinach, arugula, herbs, lemon, honey, olive oil, salt & pepper.

If you love Mediterranean flavors and eating healthy then this bowl is your jam. Olives would also make a great addition topping to this dish.

Healthy Meal Ideas from Love and Zest Skillet Italian Bruschetta ChickenSkillet Italian Herb Bruschetta Turkey (or Chicken) Breast

Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes

Ingredients: turkey or chicken breast, Italian seasoning, salt and pepper, olive oil, heirloom tomatoes, chopped basil, garlic, shallot, Parmesan, balsamic.

This recipe is technically meant to use turkey breast but I prefer chicken breast and so I added chicken instead of turkey breast to the grocery list. I love how simple, quick, healthy and delicious this recipe is. It’s perfect for summer too.

Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes

Ingredients: tortilla chips, shredded chicken, red onion, Mexican cheese blend, black beans, corn, tomatoes.

Okay, I know that I titled this week’s menu with the word healthy in it and nachos aren’t ever super healthy, but I think these are healthier than most because they are topped with lettuce, avocado and tomatoes. If you are going to crave and enjoy nachos you might as well make them right!

Prep Time: 10 minutes Cook Time: 5 minutes Total Time: 15 minutes

Ingredients: mixed salad greens, chicken breast, olive oil, red onion, strawberries, balsamic vinegar, avocado, chopped pecans.

Please take note that this recipe is only portioned in the shopping list for one serving (which in my case is perfect because I don’t think my kids would eat this happily). I love adding berries to my salads and you can’t go wrong combining with caramelized onions and avocados.

Ingredients: apple cider vinegar, dijon mustard, plain Greek yogurt, mayo, olive oil, honey, butter lettuce, romaine lettuce, bell pepper, red onion, diced tomatoes, cheddar, avocado, turkey breast, bacon.

I often order Cobb salads at restaurants and practically forget how easy it is to make this classic salad at home. It is easy to put together and easily adaptable if you want to throw in some extras like hard boiled eggs.
