Sonali Ruder is the talented physician, chef, recipe Developer & board certified foodie from The Foodie Physician. She developed a passion for food and cooking years ago when she was doing my medical training in New York City. Sonali entered a recipe contest on a whim and ended up being selected from thousands of entrants to compete on a cooking competition on The Food Network. She didn’t win the competition but after that experience, she became obsessed with cooking and decided to enroll in culinary school.
Sonali started her blog, The Foodie Physician, when she was a culinary student. She was so excited about everything she was learning in school and the blog was a great way to share all of those experiences with others. The Foodie Physician has evolved so much since then; eventually she decided to incorporate her medical background as well and make healthy cooking the focus of her blog. Her goal is to show people that healthy food can and should be delicious! So now part of the week she works in a busy Emergency Room and the rest of the week, she experiments in the kitchen and spends time with her family. She also has two new cookbooks out, Natural Pregnancy Cookbook and Natural Baby Food (in addition to her previous cookbooks Cooking Well: Anti-Aging and The Greek Yogurt Diet.)

Healthy Vegetarian Recipe Ideas from The Foodie Physician
Spaghetti Squash Lasagna from The Foodie Physician
Ingredients: spaghetti squash, olive oil, onion, garlic, crushed tomatoes, Italian seasoning, red pepper flakes, salt, pepper, ricotta cheese, egg, frozen spinach, mozzarella, Parmigiano-Reggiano cheese, parsley.
I thought I didn’t like spaghetti squash but his recipe changed my mind about that for good! It turned out delicious! I happened to just run out of olive oil before I made this recipe so I used coconut oil instead and I really liked that. Everything comes together so beautifully in this dish and it is definitely filling comfort food, perfect for Fall. It makes great leftovers too.
Sweet Potato and Kale Quesadillas from The Foodie Physician
Ingredients: sweet potatoes, chili powder, cumin, salt, olive oil, garlic, kale, black beans, cheddar, whole wheat tortillas, greek yogurt or sour cream, salsa.
Quesadillas are always a winner in my house. I love the sweet potato and black bean combo but if you happen to have some picky eaters you can make some extra plain quesadillas and everyone is happy. Avocados is another great topping idea for this recipe.
Mac and Cheese with Roasted Cauliflower from The Foodie Physician
Ingredients: cauliflower, olive oil, salt and pepper, elbow macaroni, unsalted butter, flour, milk, dijon mustard, cheddar cheese.
Macaroni and cheese is always a reliable dish in our house and I love that this recipe adds extra nutrition with the roasted cauliflower.
Tuscan Kale and Apple Salad from The Foodie Physician
Ingredients: Tuscan kale, apple, dried cranberries, sunflower seeds, sliced almonds, Parmiagiano-Reggiano, cider vinegar, Dijon mustard, honey, olive oil, salt and pepper.
This is such a perfect salad for Fall! Honeycrisp apples in my area are so delicious right now.
Roasted Beet and Arugula Salad with Orange Beet Vinaigrette
Ingredients: red and golden beets, olive oil, arugula, walnuts, goat cheese, orange beet juice, balsamic vinegar, Dijon mustard, olive oil, black pepper.
The flavor combo of beets, goat cheese, walnuts and arugula is so delicious. You really can’t go wrong with this salad, it is great for a light meal or side salad.
