This week I have five Gluten-Free Vegan Recipes from Veggies Saves the Day to share with you!
This month I’ve given myself a challenge to cut out refined sugar, flour and processed dairy but as the month has gone on I’ve decided to give myself one cheat day a week. Before I was allowing that cheat day I wanted to make a treat with my sugar-free, dairy-free, flour-free guidelines and I found this awesome key lime tart from the Blossom cookbook on the blog Veggies Saves the Day. It turned out delicious and piqued my interest in the rest of Amy’s blog, an amazing collection of simple, healthy, delicious recipes. This week I’m excited to share five of her amazing gluten-free vegan recipes with you!

Gluten-Free Vegan Recipes from Veggies Save the Day
Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes
Ingredients: gluten free pasta, garlic, avocado, basil, lemon, hemp seeds, nutritional yeast, salt, cherry tomatoes.
I love that this pasta makes a unique “pesto” using unique and nutritious ingredients like hemp seeds and nutritional yeast. For the pasta you can use any kind of gluten free pasta, some of my favorite kind is brown rice.
Ingredients: quinoa, red bell pepper, carrots, purple cabbage, green onions, lime juice, olive oil, pure maple syrup, ground cumin, cayenne, salt.
Quinoa recipes usually hold up pretty good for a few days so this is a great recipe to make once and enjoy leftovers throughout the week. I love all the vibrant colors from the veggies in this gorgeous salad!
Prep Time: 15 minutes Total Time: 15 minutes
Ingredients: olive oil, red wine vinegar, Italian seasoning, dry mustard, salt and pepper, Romaine, tomtoes, chickpeas, black olives, Pepperoncini.
You don’t need to go to a restaurant to enjoy a delicious Italian salad! This recipe is simple but delicious and is perfect for a light dinner or to make for lunches throughout your week.
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Ingredients: corn tortillas, guacamole, chickpeas, garlic powder, chili powder, oregano, cumin, olive oil, hot sauce, cilantro, lime.
I love how simple this recipe is! The recipe suggest cooking the chickpeas on the stove but I think they would also turn out beautifully if you roasted them in the oven (one of my favorite ways to enjoy chickpeas!) You can make your own guac or just buy the pre-made stuff at the store- either way it is pretty simple!
Cilantro Lime Rice and Black Beans
Prep Time: 10 minutes Cook Time: 25 minutesTotal Time: 35 minutes
Ingredients: olive oil, red onion, jalapeno, garlic, cumin, long grain white rice, black beans, vegetable broth, cilantro, lime juice, salt.
Rice and beans is such a filling, simple and budget-friendly weeknight meal! This would be a great recipe to play around with in an instant pot. You can add whatever optional toppings you want- avocado, salsa, jalapeños, etc.
