Meal Plan: Winter 2015 Week 1

Has this week been as busy for you as it has been for me? Holiday present shopping, family get togethers, and every day responsibilities have left me exhausted. I end up staying up until 3 am many nights trying to get projects done which doesn’t help with my exhaustion, especially since I’m not in college anymore and have to get up and take care of my children once they are awake.  I’m surviving, although I have big bags under my eyes… I’m pretty much done with gathering all the gifts I needed for the season so I’m hoping this week I can get more rest and feel less crazy.  What about you, are you ready for the holidays? If you still have a busy week ahead of you, I hope this meal plan can help you get through it, I really like all these recipes and think they are a great menu for kicking off winter. Persimmon and Pomegranate Salad from See and Savour

Prep Time: 10 minutes Total Time: 10 minutes

Ingredients: lettuce, fuyu persimmons, pomegranate seeds, pecorino romano, sea salt, freshly ground black pepper, sherry vinegar, red wine vinegar, extra virgin olive oil, honey.

I am in love with persimmons and pomegranates lately so this salad was a simple and delicious way of incorporating those ingredients into dinner.  This is a great side salad with practically any dinner, or makes a great light meal by itself.

Root Vegetable and Brussels Sprouts Lasagna from Cookie Monster Cooking

Prep Time: 25 minutes Cook Time: 1 hour 30 minutes Total Time: 1 hour 55 minutes

Ingredients: onion, carrots, parsnip, sweet potato, brussels sprouts, olive oil, maple syrup, salt, unsalted butter, flour, whole milk, nutmeg, no-boil lasagna, fontina, parmesan, parsley.

This lasagna is exceptionally delicious, I really love how the veggies are roasted in maple syrup… it makes even the parsnips taste good (not normally a fan).  Although this lasagna takes a while to cook, it is not that labor intensive for a lasagna and was well worth the wait.

Cauliflower Macaroni and Cheese from Damn Delicious

Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes

Ingredients: olive, panko, parsley, elbow pasta, cauliflower, garlic, onion, sour cream, milk, gruyere, sharp cheddar, parmesan, salt and pepper.

This macaroni is such a great idea because it uses more cauliflower in it than noodles and still is really filling.  I used organic bread crumbs instead of panko and really loved this dish… I think when I make macaroni for my kids for lunch (which I do quite a bit) I will start using half cauliflower in it because even my kids liked this recipe.

Creamy Leek Soup with Maple Bacon from How Sweet It Is

Prep Time: 10 minutes Cook Time: 50 minutes Total Time: 1 hours

Ingredients: leeks, olive oil, unsalted butter, salt, pepper, smoked paprika, red pepper flakes, brown sugar, roasted garlic, dry white wine, chicken or veggie stock, half and half, green onions, maple syrup.

This soup is interesting and has a great depth of flavor.  Rick really loved this dish, especially once I remembered to garnish it with green onions on his second helping, that garnish somehow makes all the difference.  And of course the bacon is pretty amazing as well, drenched in maple syrup.

Goat Cheese & Caramelized Onion Pizza from Minimalist Baker

Prep Time: 10 minutes Cook Time: 50 minutes Total Time: 1 hour

Ingredients: pizza crust or flat bread, white onion, salt and pepper, olive oil or butter, goat cheese,milk, basil or arugula.

This pizza is super easy and tastes great.  The only time consuming aspect is the caramelized onions, which you could totally make ahead of time.  We decided to use very thinly sliced apples as our garnish instead of basil or arugula and we fell in love.
