Chunky Vegetable Soup from Butterfly Foodie

Prep Time: 10 mins  Cook Time:  30 minutes  Total Time:  40 minutes

Ingredients:  Olive Oil, Onion, Garlic, Celery, Carrots, Fresh Thyme, Canned Chopped Tomatoes, Vegetable Stock or Water, Pasta.

This soup was hearty and delicious.  Especially in winter, when colds and the flu seem to be everywhere, this soup felt like a giant bowl of healthfulness.  I added some extra carrot and garlic and used vegetable stock instead of water.   I wouldn’t say this is a new family favorite but my whole family ate and enjoyed it.

Sweet Potato Burrito Smothered in Avocado Salsa Verde

Prep Time: 15 mins  Cook Time:  45 minutes  Total Time:   1 hour

Ingredients:  Sweet Potatoes, Olive Oil, Cumin, Smoked Hot Paprika, Cayenne, Black Pepper, Whole Wheat Tortillas, Roasted Red Peppers, Black Beans, Jack Cheese, Ripe Avocadoes, Salsa Verde, Garlic, Jalapeño, Lime, Cilantro, Romaine Lettuce, Red Onion, Sour Cream (optional).

Rick said these were the best burritos he’s ever had in his life. And that means a lot coming from the guy who ate burritos multiple times a week after surf sessions while living in San Diego (the burrito capital of the world!).  The avocado sauce is what makes these so amazing.  I’m certain I would have loved using the cayenne and paprika called for in the recipe but I omitted them so my kids would eat it.  Besides that I followed the recipe as is and we all loved it! If I made it again I might add a little less of the salsa to the sauce… just taste it as you go to make sure you like the ratio of salsa to avocado.

Honey Goat Cheese Pizza from This Week for Dinner

Prep Time: 10 mins  Cook Time:  40 minutes  Total Time:  50 minutes

(Time does not include dough preparation- allow extra time to prepare dough if needed.)

Ingredients:  Honey Goat Cheese, Caramelized Onions, {Fresh} Mozzarella Cheese, Fresh Parmesan Cheese, Olive Oil, Salt and Pepper, Pizza Crust/Dough.

This pizza is delicious. I used a whole wheat pizza dough and simply mixed in some honey with my goat cheese.  This could be a really quick dinner if you prepare the dough and caramelized onions ahead of time.  I used Fresh mozzarella but I imagine shredded would be great too.  The recipe doesn’t ask for exact amounts so just do what feels right to you, with three different styles of cheese and caramelized onions you can’t go wrong!

Zucchini and Yellow Squash Fettucine Aflredo from Rainbow Delicious

Prep Time: 10 mins  Cook Time:  20 minutes  Total Time:  30 minutes

Ingredients:  butter, heavy cream, parmesan cheese, fettuccine, zucchini, yellow squash, salt and freshly ground black pepper.

This is one of my easy go to dinners and if you don’t have yellow squash or zucchini on hand you can easily substitute other vegetables like broccoli.  This recipe is kid friendly and delicious if I say so myself.

Turkey, Spinach and Cranberry Cream Cheese Pitas from Rainbow Delicious

Prep Time: 15 mins  Total Time: 15 minutes

Ingredients:  Turkey, Spinach, Pitas or Flatbread, Cream Cheese, Dried Cranberries, Honey, Cranberry Sauce (optional).

I love these pitas; they are quick, easy, delicious and kid-friendly.  We eat them for dinner but they would be a great lunch to take to school, work or other outing.

  1. I finally made the sweet potato burrito!! I’ve been wanting to do it since you originally posted it. I will probably tone down the spice and omit the jalapeno pepper out of the avocado sauce for the kids next time, but they were really good. Thanks for finding great eats!
