Caramelized Fennel, Dried Fig, Pear & Goat Cheese Galette

My amazing sister in law Meg recently turned 30 and to celebrate I hosted a family birthday dinner. When I asked her what she wanted for dinner she requested the butternut squash, caramelized onion and spinach galette she had seen me post on instagram and another galette with figs (she is pregnant and has been craving figs lately). I saw this fresh fig and goat cheese galette recipe that looked pretty amazing and hoped that I could somehow find some fresh figs. Sadly, every grocery store I called acted like I was a little crazy in my search for figs since they are not currently in season. I had to get creative and use dried figs instead and this is the recipe I came up with. I know the picture isn’t great but it tasted delicious.
