This salad is loaded with delicious ingredients, perfect for fall, including persimmons, pears, feta, spinach, and pecans.

Ingredients

  • seeds from 1 small pomegranate
  • 1 avocado diced
  • 1 pear sliced
  • 1 fuyu persimmon quartered and thinly sliced
  • handful of walnuts
  • 5 oz mixed baby greens
  • large handful crumbled feta

Dressing

  • 1/4 C white balsamic
  • 1/2 C olive oil
  • salt and pepper to taste
  • 1/4 t dijon mustard
  • 2 small tangerines squeezed for fresh juice

Instructions

  1. To make the dressing add white balsamic, olive oil, salt and pepper, dijon, and tangerine juice to a small jar. Tighten lid and shake until well blended. Refrigerate until you assemble the salad and shake again before pouring over salad.
  2. Assemble salad by adding all ingredients in a large serving bowl, with greens on bottom.
  3. Mix in dressing right before enjoying salad
