Ingredients

  • 4 sandwich rolls
  • 12 oz bacon
  • 4 leaves romaine lettuce
  • 4 tablespoon mayonaise
  • 3 to matoes
  • 2 yellow onions
  • 2 T butter

Instructions

Caramelize Onions

  1. Melt butter in skillet (preferably stainless steel) over medium heat.
  2. Add the onions and stir them to coat with butter.
  3. Let the onions caramelize by checking them every 5 to 10 minutes and stirring to scrape up any fond that forms at the bottom. After about 30 to 40 minutes when the onions are starting to get golden taste test to make sure the onions are caramlized enough for you. If you want a richer flavor continue caramelizing for 5 to 10 more minutes.
  4. Deglaze the pan by pouring in 1/4 C water. Use the liquid to scrape up the fond and stir it into onions until the liquid is mostly evaporated. Add salt to taste and set caramelized onions aside.

Cook Bacon

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Lay the bacon on a sheet pan and bake for 15 to 20 minutes until the bacon is desired crispiness.
  3. Dry on paper towels and set aside.

Assemble Sandwich

  1. Spread desired amount of mayonnaise on the rolls.
  2. Top roll with caramelized onions, bacon, lettuce, tomatoes and the top piece of roll.
