These simple sheet pan chicken fajitas have saved me on so many weeknights. The recipe is easy, there aren't too much dishes, it is delicious, and it takes less than an hour to get on the table.
Preheat an oven to 400° Farenheit.
Arrange chicken, onion slices, bell pepper slices, seasonings and olive oil on large sheet pan or baking dish and combine well so that the olive oil and spices are evenly distributed.
Place baking sheet in the oven, and cook for 15-20 minutes, or until the chicken is no longer pink. Stir once midway through, at 10 minutes.
Set your oven to your broiler and let fajita filling continue to cook under the broiler until fajitas start to slightly char.
Remove fajitas from oven and generously squeeze the juice from one lime over the fajita filling.
Serve fajita filling over tortillas with your favorite toppings such as shredded cheese, sour cream, salsa, guacamole and hot sauce. Serve with lime wedges.
