This cashew chicken lettuce wraps recipe takes less than 30 minutes to make and is a family favorite! Ingredients include lettuce, ground chicken, avocado oil, onion, green pepper, water chestnuts and a sauce that is out of this world! In a bowl, whisk together all sauce ingredients until well combined.
In large frying pan heat up 1 tablespoon of avocado oil and then add ground chicken. Cook chicken 3-5 minutes or until it begins to brown. Add diced onions to browned chicken and cook for another 3-5 minutes or until the onions are fragrant and start to soften. Add bell peppers and water chestnuts and cook for another 3-5 minutes or until the bell peppers are tender crisp.
Slowly pour in sauce and mix until the chicken and veggies are evenly coated with sauce, about 3 minutes.
To serve, scoop filling into lettuce and garnish with carrots spirals.
