Cashew Chicken Lettuce Wraps Recipe

This cashew chicken lettuce wraps recipe takes less than 30 minutes to make and is a family favorite! Ingredients include lettuce, ground chicken, avocado oil, onion, green pepper, water chestnuts and a sauce that is out of this world! It is a perfect weeknight meal, kid-friendly, dairy-free and delicious. This recipe is adapted from the Asian Chicken Lettuce Wraps recipe on Joy Food Sunshine.

Lettuce& Garnish

  • 2 medium carrots, spiralized
  • 1 head lettuce of choice


  1. In a bowl, whisk together all sauce ingredients until well combined.

  2. In large frying pan heat up 1 tablespoon of avocado oil and then add ground chicken.

  3. Cook chicken 3-5 minutes or until it begins to brown. 

  4. Add diced onions to browned chicken and cook for another 3-5 minutes or until the onions are fragrant and start to soften.

  5. Add bell peppers and water chestnuts and cook for another 3-5 minutes or until the bell peppers are tender crisp.

  6. Slowly pour in sauce and mix until the chicken and veggies are evenly coated with sauce, about 3 minutes.

  7. To serve, scoop filling into lettuce and garnish with carrots spirals.
