This mint chia seed limeade recipe is sweetened with honey. The chia seed adds a fun texture, the lime adds a nice tangy foundation and the mint adds a cool sensation.
In a pitcher add chia seeds to water. Stir and let sit for about an hour so the chia seeds can gel.
Combine lime juice, honey and mint leaves in a blender until pureed.
Once the chia seeds have gelled in the water for an hour, add in the lime honey mint mixture and stir to combine.
Serve chilled. It is normal for the chia seeds and water to separate, so give it a quick stir before pouring and drinking.
Can be stored in fridge for 2-3 days.
