Turkey Spinach Cranberry Cream Cheese Pitas

Turkey, spinach cranberry cream cheese pitas are a simple, flavorful lunch of snack.

Ingredients

  • 6 turkey slices
  • 3 cups spinach
  • 8 oz softened cream cheese
  • 1 T honey
  • 1/2 C dried cranberries
  • 2 T cranberry sauce optional
  • 4-6 pitas or flatbread

Instructions

  1. Roughly chop the dried cranberries on a cutting board.
  2. In a kitchen-aid or mixing bowl combine softened cream cheese, honey, dried cranberries and cranberry sauce (optional, but makes the cream cheese a nice color) to make the cranberry cream cheese.
  3. Cut your pitas once horizontally and then diagonally to create four slices. Carefully separate and open each pita piece. (If using flatbread, put cranberry cream cheese, spinach and turkey between two pieces of flatbread.)
  4. Spread the cranberry cream cheese on one or both sides of the inside of your pita, add a little spinach and turkey and close.
