Ingredients

  • 1 cob corn kernels cut off of the cob
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 4 oz can green chilies drained
  • 1 teaspoon cumin
  • 3/4 teaspoon salt
  • 1/4 cup olive oil
  • 1 can black eyed peas drained and rinsed
  • 1 bunch cilantro leaves, chopped
  • 2 avocados cut into bite sized chunks
  • 1/8 teaspoon pepper
  • 1/4 cup red wine vinegar

Instructions

  1. All ingredients to a large bowl, and gently mix to combine.
