Citrus Caprese Recipe

Unique caprese salad recipe with citrus, fresh mozzarella, tomatoes and basil.

Ingredients

  • 16 oz fresh mozzarella slices
  • 4 oranges* sliced into citrus rounds
  • 3 heirloom tomatoes sliced into rounds
  • 1/2 C balsamic vinegar
  • 1 paige tangerine for juice
  • 1 bunch fresh basil

Instructions

  1. Heat the balsamic vinegar and juice from 1 small tangerine over medium heat until it starts bubbling, then reduce heat to medium-low until it thickens but be careful that it doesn’t burn. If you dip a spoon in it and drizzle the balsamic back into the pan and it has a thick syrup-like consistency instead of a watery consistency, then you are done. Be careful not to burn it (I have made this mistake many many times!) Take off the heat and set aside.
  2. Arrange the orange slices, heirloom tomato slices, basil and mozzarella on a platter. Drizzle the balsamic reduction over the top.

* can be a mix and match of your faves, I used a combo of blood oranges, cara caras, and navel oranges
