Delicata Pizza Recipe

Simple pizza recipe made with premade pizza dough, your favorite bbq sauce, mozzarella cheese, cilantro, red onion and delicata squash.

Ingredients

  • 1 pizza dough ball
  • 1 tablespoon olive oil
  • 1 delicata squash
  • 1/4 red onion, thinly sliced
  • 1/4 cup cilantro leaves
  • 8 oz shredded mozzarella
  • 1 avocado, cubed
  • 1/2 cup BBQ sauce
  • 1/2 teaspoon coriander seasoning optional
  • salt & pepper to taste

Instructions

  1. Preheat oven to 450 degrees.

  2. On a rimmed baking sheet combine delicata squash slices with 1 T olive oil, a dash of salt, pepper and 1/2 t coriander (optional).

  3. Place baking sheet in the oven and roast for 20-25 minutes, stirring once after 10 minutes.

  4. To assemble pizza roll out pizza dough on floured surface and place on baking sheet. Spread a thin layer of bbq sauce and top with mozzarella. lay slices of roasted delicata squash and red onion slices on pizza.

  5. Bake pizza for 8 to 10 minutes.

  6. Remove from oven when mozzarella starts to get bubbly. Garnish pizza with avocado slices and cilantro.
