This delicious salad meal prep is made with citrus, fennel, feta and walnut salad is here to help you achieve your New Years goals of enjoying healthy foods! Cara cara and blood oranges highlight the amazing citrus during the winter season and pair wonderfully with the other healthy ingredients.
Add the citrus rounds to the smaller divided section of the snacker or divided rectangle version of the Rubbermaid® TakeAlongs® Meal Prep Containers. Divide the citrus rounds evenly between four different containers.
In the larger divided section evenly divide the rest of the ingredients including the greens, walnuts, fennel, and mint.
Make dressing by adding olive oil, red wine vinegar, honey, salt and pepper to a jar. Secure the lid and shake vigorously until well mixed. Divide dressing into four small dressing jars/containers and add to large divided section of your meal prep container.
Put lids on your meal prep salads and refrigerate until you are ready to eat! Meal prep salads last up to 4 days. When you enjoy your salad use your fork and knife to move the citrus over to the large section and cut up feta and orange slices into smaller bite-sized pieces.
