Ingredients

  • 2 cups whole Greek yogurt
  • 1 ripe avocado, large
  • 2 limes, for juice
  • 2 teaspoon lime zest, divided
  • 2 tablespoons honey plus more for drizzling
  • 1 cup granola

Instructions

  1. This recipe makes 4-6 small parfaits

  2. Add the Greek yogurt, peeled and de-pitted avocado, lime juice, 1 teaspoon of lime zest and honey in a blender until smooth. This step can be done a few hours in advance, chill until ready to layer parfaits.

  3. Layer the avocado yogurt with the granola and top with a the reserved lime zest and a drizzle of honey.
