Ingredients

  • 2-3 lbs beef bones I prefer pastured, grass-fed
  • 2-3 celery stalks large chopped
  • 2-3 carrots large chopped
  • 2 leeks (or you can substitute with 1 onion) large chopped
  • handful fresh herbs rosemary, thyme or sage are good options
  • 1 teaspoon Himalayan salt I use large pink Himalayan rock salt
  • 1 teaspoon pepper I use whole peppercorns
  • 1 tablespoons apple cider vinegar
  • 2 bay leaves
  • 6-8 Cups filtered water enough to fill instant pot about 2/3 full.

Instructions

Roast Bones

  1. Preheat oven to 350ºF.

  2. Place bones on baking rack and roast in oven for 30 minutes.

Create Bone Broth in Instant Pot

  1. Add roasted bones and all other ingredients into your instant pot except for the water.

  2. Pour filtered water over ingredients until your pot is about 2/3 full, and never going above the MAX fill line. I usually use about 6-7 cups of water for this step.

  3. Secure lid on the instant pot securely according to the instruction manual, making sure the valve is set to sealed. Using the Manual button set the instant pot on high pressure for 120 minutes.

  4. After the 120 minutes allow the broth to naturally release, which will take about 45 minutes.

Straining and Cooling the Bone Broth

  1. Very carefully strain the bone broth into a large casserole dish. Add a handful or two of large ice cubes and stir around to bring the temperature of the broth down a bit. (Picture of this step can be found below recipe instructions)

  2. Spoon off the top layer of fatty liquid and throw away. Or you can wait to do this step once the broth is in the jars.

  3. Pour broth carefully into glass jars. I like to use 24 oz wide mouth mason jars. This recipe makes about 3 24 oz jars, plus a little extra.

  4. Store jars in the refrigerator that you plan to use in the next 3-5 days, and in the freezer that you plan to use in the next 5-6 months. Leave 1-2 inches of headspace at the top so they won't break in the freezer.
