BLT Pasta with Arugula for Two

This pasta gives you all the amazing flavor of a BLT sandwich but in pasta form. Great for a quick lunch or weeknight dinner.

Ingredients

  • 4 oz bacon cut into 1/2 inch pieces
  • 1/2 lb heirloom cherry tomatoes halved
  • 1 8.5 oz package Barilla® Ready Pasta Rotini
  • 2 oz baby arugula plus more for garnish
  • 1/4 cup Parmesan cheese
  • flaky salt and freshly ground pepper

Instructions

  1. Put bacon pieces in large skillet and cook on medium until crisp. Stir occasionally so it does not burn. Bacon should be done in about 8 minutes. Remove bacon from skillet and set aside on a paper towel lined plate.

  2. Add the tomato halves to the bacon grease, stirring often. Season with salt and pepper. Cook for 5-7 minutes, or until the tomatoes begin to fall apart. Add half of the bacon back to the skillet.

  3. Add Barilla Ready Pasta Rotini and stir to coat. Add arugula directly to the skillet. Cook until the arugula starts to wilt, about two minutes.

  4. Serve in bowls and top with remaining bacon, arugula, and parmesan cheese. Serve with with flaky salt, and freshly ground pepper.
