Sweet Potato, Ricotta, Brown Butter and Sage Pizza

Pizza topped with thinly sliced sweet potatoes, ricotta, browned butter, and sage. Delicious Fall pizza adapted from Feast by Sarah Copeland.

Ingredients

  • 4 oz fresh ricotta
  • 1 small sweet potato very thinly sliced
  • cornmeal for dusting
  • flour for dusting
  • pizza dough home-made or store-bought
  • 1 oz parmigiano-reggiano cheese grated
  • 1 T olive oil
  • 1 T butter
  • 8 sage leaves
  • sea salt & freshly ground pepper

Instructions

  1. Preheat oven with pizza stone in it to 500 degrees.
  2. On lightly floured surface roll out pizza dough and then place rolled-out dough on paddle lightly covered with cornmeal.
  3. Sprinkle light layer of parmigiano-reggiano evenly on the dough and then add a layer of thin sweet potatoes.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Transfer pizza from paddle to pizza stone and bake for 8 to 12 minutes.
  6. While pizza is baking melt butter in small pan on low. Add the sage until butter browns.
  7. Remove the sage leaves to drain on paper towel and then crumble into smaller pieces.
  8. Take pizza out of the oven onto a cutting board.
  9. Add spoonfuls of ricotta, drizzle with brown butter and crisped pieces.
  10. Slice it up and Enjoy!
