Weeknight Dinner Ideas: The Gingered Whisk

My weeknights have been so busy lately with my husband traveling, PTA meetings, helping my kids with their homework, never-ending laundry and of course, dishes. I know I’m not the only one who is busy during the weekdays but still wants to put wholesome food on the table when possible. This week I’m sharing five weeknight dinner ideas from Gingered Whisk which include some crockpot recipes. There is a grocery shopping list included to help with organization; I find that if I have a shopping list ready and am able to complete the grocery shopping, then when 5 pm rolls around I’m much more likely to feel like cooking because I already have what I need.

I started this little blog of mine as a hobby to keep me busy while my husband worked his way through medical school and residency. At first I posted anything and everything, but after I started having children I really started to focus on easy and healthy weeknight meals. We love trying new foods and cuisines from other cultures, so I do a lot of recipes that are easy introductory ways to infuse new foods into your regular dinner rotation, too. I am currently working on a “Eat Like A Princess” series which I am so excited about! I am taking each of the typical Disney Princesses and creating an easy meal based on something they would have eaten where they live. It’s been a really fun way to have my children try new foods, and they have been so excited about it! When I have free time, you can often find me playing outside – we love hiking, camping, and exploring parks. I am also a really big reader! You can almost always find me curled up with a good book!

Weeknight Dinner Ideas from The Gingered Whisk

greySuper Easy Chicken Tikka Masala

Prep Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes

Ingredients: yellow onion, red onion, garlic, ginger, garam masala, chili powder, turmeric, cumin, cinnamon, cloves, salt, cayenne, almonds, cilantro, lemon, chicken, plain yogurt, tomato puree, coconut milk. For serving: rice, cilantro, naan.

This is one of those recipes that keeps on giving; the masala paste makes enough for 6 meals. Once you have the paste made this recipe is one pan. You will need a food processor to make the paste.

greyEasy 30 Minute Orange Chicken

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes

Ingredients: orange juice, orange zest, soy sauce, rice vinegar, olive oil, ginger, garlic, cornstarch, olive oil, chicken, green onions, sesame seeds, rice.

This easy and healthy skillet orange chicken is a perfect weeknight dinner idea. It takes only 30 minutes to prepare and includes fresh oranges.

Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes

Ingredients: flank steak, salt, pepper, olive oil, brown sugar, cumin, garlic powder, chili powder, soy sauce, mango, pineapple, red bell pepper, red onion, lime, ginger, cilantro, plain greek yogurt, honey, salsa verde, tortillas, purple cabbage.

The beautiful “rainbow tacos” are loaded with fresh fruits and vegetables that complement the flank steak and only take 30 minutes to make.

Prep Time: 5 minutes Cook Time: 7 hours Total Time: 7 hours 5 minutes

Ingredients: chicken breasts, green chiles, great northern beans, shallot, cumin, oregano, garlic, chili powder, lime, chicken broth, flour, milk, frozen corn. Toppings: green onions, shredded cheese, tortilla strips, sour cream, avocado.

This soup recipes uses a slow cooker making it another simple weeknight dinner idea. You can play around with the toppings and add whatever you like. The soup is full of flavor and an awesome comfort food.

Crockpot Chicken Enchilada SoupWeeknight-Dinner-Ideas-with-Gingered-Whisk-on-Rainbow-Delicious

Prep Time: 5 minutes Cook Time: 8 hours Total Time: 8 hours 5 minutes

Ingredients: chicken breasts, chicken stock, red enchilada sauce, black beans, fire roasted diced tomatoes, corn, diced green chiles, garlic cloves, white onion, cumin, salt. Toppings: cilantro, avocado, cheese, sour cream, tortilla strips.

This is another simple crockpot soup just like the recipe above it. Toppings are very similar and since both of them make large batches you can freeze leftovers for another busy night.
