Turkey, Spinach Cranberry Cream Cheese Pitas

Turkey, spinach cranberry cream cheese pitas are a simple, flavorful lunch of snack. Our gym had a Christmas party last month that included catered meals for breakfast, lunch and dinner.  I wasn’t aware of this perk until my yoga instructor mentioned it after our 11:00 am class, but when I heard about the free food I was obviously all in. As much as I love to cook, I equally love a break;  I missed the breakfast but enjoyed the lunch and brought my husband and kids back for dinner too. Among other things, the caterers offered these delicious turkey, spinach and cranberry cream cheese pitas at lunch and I think I ate about ten because they were that good.  I have been craving them ever since and  have created my own copycat recipe.

Turkey, Spinach Cranberry Cream Cheese Pitas

turkey slices
a few large handfuls of spinach
8 oz softened cream cheese
1 T honey
1/2 C dried cranberries
2 T cranberry sauce (optional)
4-6 pitas (or flatbread)

1. Roughly chop the dried cranberries on a cutting board.

2. In a kitchen-aid or mixing bowl combine softened cream cheese, honey, dried cranberries and cranberry sauce (optional, but makes the cream cheese a nice color) to make the cranberry cream cheese.

3.  Cut your pitas once horizontally and then diagonally to create four slices.  Carefully separate and open each pita piece.  (If using flatbread, put cranberry cream cheese, spinach and turkey between two pieces of flatbread.)

4.  Spread the cranberry cream cheese on one or both sides of the inside of your pita, add a little spinach and turkey and close.

5.  Enjoy!

Ingredients

  • 6 turkey slices
  • 3 cups spinach
  • 8 oz softened cream cheese
  • 1 T honey
