This persimmon, pear and pomegranate salad is so delicious! Do you like persimmons? If you don’t know the answer to that question I highly recommend you get your hands on a persimmon while they are still in season and figure it out! My hope is that you enjoy them as much as I do, they are such a Fall treat and are delicious in salads, like this persimmon, pear and pomegranate salad. I also love to put them in my smoothies as they add sweetness without using refined sugars.

This salad highlights some of my favorite Fall flavors: persimmons, pomegranates and pears with the addition of avocado, walnuts and feta. The dressing is a simple balsamic with a little fresh citrus to give it a kick.

How To Make This Salad & Dressing

To make the dressing add white balsamic, olive oil, salt and pepper, dijon, and tangerine juice to a small jar. Tighten lid and shake until well blended. Refrigerate until you assemble the salad and shake again before pouring over salad.

Assemble salad by adding all ingredients in a large serving bowl, with greens on bottom.

Mix in dressing right before enjoying salad!

Ingredients

  • seeds from 1 small pomegranate
  • 1 avocado diced
  • 1 pear sliced
  • 1 fuyu persimmon quartered and thinly sliced
  • handful of walnuts
  • 5 oz mixed baby greens
  • large handful crumbled feta

Dressing

  • 1/4 C white balsamic
  • 1/2 C olive oil
  • salt and pepper to taste
  • 1/4 t dijon mustard
  • 2 small tangerines squeezed for fresh juice

    I made this salad for Thanksgiving dinner! But I didn’t add pears to it – great idea!! I also used hazlenuts instead of pecans. I love love love hazelnuts. I also used lemon tarragon dressing – similar to balsamic with citrus. Love this salad – thanks for the ideas!

    Delicious salad and perfect for the holidays! I made it without the feta and walnuts because I didn’t have any and subbed Asian pears for the regular pears. The dressing, fruit, and greens blended together nicely and everyone loved it, including my teenage boys and my 70-year-old parents. It was the perfect light salad to go with smoked ribs and crispy oven-roasted potatoes.
