Meal Plan: Low Carb Meal Plan

This week I received an email from a reader who requested a low carb meal plan.  I’m not super familiar with low carb diets, and from a little research it seems like there are lots of different versions, but I settled on using the definition of  limited grains,  no refined sugars and no highly processed ingredients. I have looked through my tried and true recipes to find recipes that qualify for low carb and this week’s meal plan and free grocery shopping list consist of five of these recipes. I hope you enjoy them!

Quinoa Stuffed Bell Peppers from Eat Yourself Skinny

Prep Time: 15 minutes  Cook Time: 1 hour 15 minutes Total Time:  1 hour 30 minutes

Ingredients: Onion, Olive Oil, Celery, Cumin, Garlic, Jalapeno, Canned Diced Tomatoes, Black Beans, Quinoa, Pepper Jack Cheese, Red Bell Peppers, Salt & Pepper.

This is a recipe from bell pepper round-up and they are so good.  It is a flavorful dish with a fun presentation that our whole family enjoys.  It’s great with some cilantro as a garnish as well!

Sweet Potato Chili from Chocolate Covered Katie

Prep Time:  15 minutes Cook Time:  30 minutes Total Time: 45 minutes

Ingredients: Onion, Sweet Potato, Diced  Zucchini, Black Beans, Diced Tomatoes, Chili Powder, Cumin, Salt, Orange Zest, Water {or Broth}, {Avocado}

This is a great go-to chili recipe and was featured in our sweet potato round-up.  I love the addition of orange zest and the fact that this recipe if dairy free.  It is awesome topped with avocado.  I used two cans of Black Beans and two small sweet potatoes (not sure if that equals 20 oz or not but I couldn’t figure out the conversion). This chili is great the next day for leftovers.

Roasted Fennel and Butternut Squash Soup from Cafe Johnsonia

Prep Time: 15 mins  Cook Time:  55 minutes  Total Time:  1 hour 10 minutes

Ingredients:  extra virgin olive oil, onion, fennel, butternut squash, stock, salt and pepper, heavy cream or creme fraiche (optional).

This recipe is featured in the winter squash soup round-up. I love butternut squash soup and this is one of my favorite recipes.  The fennel adds such a great flavor to the soup and our whole family loved it. I used heavy cream (obviously) even though it is optional.

Sweet Potato & Pomegranate Salad from Love & Lemons

Prep Time: 10 minutes Cook Time:  25  minutes  Total Time:  35 minutes

Ingredients:  Sweet Potatoes Baby Salad Greens, Pomegranate Seeds, Crumbled Feta,  Pistachios, Cilantro, Scallions, Olive Oil, Garlic, Honey, Sherry or White Wine Vinegar, Salt & Pepper.

This Salad is seriously so so good and is also featured in the sweet potato round-up.  I will definitely be making this salad again and again.

  Roasted Beet, Pear & Walnut Salad from Camille Styles

Prep Time:  15 minutes Cook Time:  50 minutes Total Time: 1 hour 5 minutes

Preparation Tip: Roast the beets ahead of time (like the night before) so putting together the salad before you eat is really quick.

Ingredients: Beets, Olive Oil, Pear, Toasted Walnuts, Feta Cheese, Salad Greens, {Quinoa}, {Sprouts}, Walnut Oil, Balsamic Vinegar, Honey, Salt & Pepper.

This salad is unique and flavorful and is featured in the beet round-up.
