This quote has been on my mind lately and today I’m just feeling really grateful for life in general, despite the messiness and difficulties that arise. I’m really enjoying the summer weather and sunshine and am excited to share five fun summer recipes that I think you will enjoy. I hope you have a great week!

Fun Summer Recipes

Avocado Caprese Chicken Salad with Balsamic Vinaigrette from Joyful Healthy Eats

Prep Time: 3 minutes Cook Time: 12 minutes Total Time: 15 minutes

Ingredients: chicken breast, mozzarella balls, avocado, spring salad mix, cherry tomatoes, fresh basil, dried basil, garlic, dijon, lemon juice balsamic vinegar, olive oil, salt and pepper.

I pretty much love any variation of a caprese (and by the way I just learned this week I have been pronouncing caprese wrong my entire life… it feels like Spanish class all over again!) and this salad is amazing. It is simple, classic, healthy and filling. Make it!

Grilled Peach Pizza from Say Yes

Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes

Ingredients: peaches, mozzarella, caramelized onions, prosciutto, fresh basil, pizza crust/dough.

I love peach pizzas and this is one of my favorite ones I’ve tried to date. The combo of prosciutto, caramelized onions and peaches pretty much melts in your mouth and makes it feel like summer, even though we are technically still in spring. We made ours on the grill (our first time grilling pizza!) and it was fab but would still be good in the oven on a pizza stone as well.

Pizza with Lemon Smoked Mozzarella and Basil

Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes

Ingredients: pizza dough, lemon, fresh {smoked} mozzarella, basil, olive oil.

If you have the time this recipe includes an actual crust recipe to try, but I just bought pre-made pizza crust (I’ve been loving the whole foods pizza crust lately because there are no weird ingredients). Also, I hate smoked cheeses unfortunately so I just use plain old un-smoked mozzarella and love the way this pizza turns out. It is unique and I love the lemon pieces in it! Some in my family pick off the actual lemon slices before they eat it but the lemon flavor is still present.

Pea Guacamole Seared Halloumi Tacos from Salt & Wind

Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes

Ingredients: grape of cherry tomatoes, garlic, olive oil, parsley or cilantro, pepper, sweet peas, avocado, lime or lemon, Halloumi, flour tortillas.

These tacos are so amazing! This is one of my favorite vegetarian taco recipes and it is featured in my top 10 veggie taco round-up. It is an adaptation from the Feast Cookbook which I just got for my birthday and am in love with. I have used both corn and flour tortillas in these tacos and either are delicious. I prefer using cilantro over parsley.

Nuts about Berries Salad from Oh So Delicioso

Prep Time: 15 minutes Cook Time: 5 minutes Total Time: 20 minutes

Ingredients: canola (or olive) oil, white balsamic vinegar, salt, honey, mustard powder, red onion, poppyseeds, almonds, sugar, cinnamon, salt, romaine (or other greens), strawberries, blackberries, blueberries.

This salad is one that even the kids will like because of the sugared almonds and berries in it- YUM. I used olive oil instead of canola, used a tad of dijon mustard instead of mustard powder in the dressing and used spinach for the greens. This is a winning salad that makes a great light lunch, or side salad with dinner.
