Hate it or love it, Cauliflower is a versatile and healthy vegetable lends itself well in soups, pastas or simply steamed as a side or with homemade cheese dip.   There are plenty of health benefits from cauliflower, so if you aren’t eating it already, I suggest you try adding some cauliflower to your diet!

Health Benefits

As a member of the brassica or cabbage family, cauliflower contains indoles that make it a potent cancer fighter.  The sulforaphane found in cauliflower also helps fight cancer by entering the bloodstream and turbocharging the body’s antioxidant defense systems.  One cup of cauliflower contains 3 g or fiber, over 50 mg of vitamin C, 176mg of potassium, and 55 mcg of folate.

In Season & Storage

Cauliflower is available all year but is peak season is the fall.  When picking out your cauliflower, look for a clean, creamy white and compact head with tight bud clusters. Cauliflower heads surrounded and protected by many thick green leaves will stay fresher longer.

Cauliflower can stay good for up to five days stored in your crisper or in a loosely sealed, dry plastic bag.

  1. Ooh, these recipes look so good! I have started added cauliflower to our mashed potatoes. The kids know I do it, and they can’t taste the difference.
