Whole Food Meal Plan from Seasonal Cravings

greyChicken Thai Basil with Zucchini Noodles

Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes

Ingredients: chicken breast, sesame oil, garlic cloves, tamari or coconut aminos, fish sauce, crushed red pepper, ginger, red pepper, sugar snap peas, Thai basil, zucchini noodles.

This recipe is gluten free, paleo, whole30 and is ready in under 30 minutes! You can buy zucchini noodles pre-made from stores like Whole Foods or you can spiralize your own if you have a spiralizer. (I use this hand held spiralizer or my paderno 4-blade)

greyAcorn Squash Soup with Turmeric

Prep Time: 10 minutes Cook Time: 54 minutes Total Time: 1 hour 4 minutes

Ingredients: acorn squash, olive oil, carrot, onion, apple, ginger, turmeric, coconut milk, water, salt, pepper.

This flavorful, seasonal soup is paleo, whole 3o approved, gluten free, dairy free, and vegan! Can’t really go wrong with this one! It makes great leftovers and I imagine you could even freeze some to enjoy at a later date.

greySheet Pan Chicken Fajitas

Ingredients: chicken breasts, yellow and red bell peppers, onion, garlic, cumin, chili powder, cilantro, flour or corn tortillas.

These fajitas are ready in under 30 minutes and are the perfect quick, family-friendly weeknight dinner. Feel free to add additional toppings like cheese, sour cream, salsa, and avocado.

greyGreek Zucchini Noodle Salad

Ingredients: zucchini, grape tomatoes, English cucumber, olives, basil & tomato feta, fresh basil, red wine vinegar, olive oil, lemon, herbs de Provence or thyme.

This fresh salad is colorful, low carb, gluten free and if you leave out the cheese it is paleo or whole 30 approved.  If you can’t find the basil and tomato feta at your grocery store you can substitute with regular feta and it will still be fine. This recipe is perfect for make-ahead lunches for the week, just keep the salad dressing separate.

greySlow Cooker Mexican Chicken Soup

Prep Time: 10 minutes Cook Time: 8 hours Total Time: 8 hours 10 minutes

Ingredients: black beans, onion, mild diced green chilis, garlic cloves, chicken broth, diced sweet potatoes, cumin, chili powder, red pepper flakes, chicken thighs, salt and pepper, optional toppings: avocado, green onions, sour cream, jalapeños, lime wedges, tortilla chips.

This crockpot soup is a great weeknight meal because you can set it and basically forget it until meal time. The soup is loaded with flavor, gluten free, and simple! I like to top mine with avocado, sour cream, green onions, cheese and tortilla chips.
