Watermelon Avocado Burrata Caprese Salad Recipe

To me summer is all about the Caprese salad! I love the traditional Caprese but I’m also a fan of unique Caprese variations and today I’m excited to share with you a watermelon avocado burrata Caprese salad recipe. I recently went on a bachelorette weekend getaway with one of my childhood best friends and enjoyed a dish similar to this at a restaurant in Sausalito. It is a dish that’s so good I knew I would recreate it at home, which is exactly what I did. It is perfect as a light lunch or dinner, or a side for any summer meal. To make it more filling add grilled chicken.

To get a nice, sweet and crisp watermelon search for one that feels heavy for its size and has a yellow round spot and some brown lines in the skin.

For the tomatoes, large, sweet heirlooms are my preference. Tomatoes from your garden or the farmers market are exceptionally delicious.

Fresh burrata cheese can be found at most grocery stores (I usually get mine at Trader Joe’s) but if you can’t find burrata you can use fresh mozzarella instead since burrata is simply fresh mozzarella encapsulating a creamy filling.

Also, you want an avocado that feels slightly soft, not mushy and not hard.

Finally, a nice quality olive oil is also important. I like to use a basil olive oil for this salad but any high quality, cold-pressed & extra virgin olive oil that you like is fine.

Ingredients

  • drizzle basil olive oil extra virgin, cold pressed
  • 1 avocado sliced
  • 1/4 watermelon sliced into triangles
  • 2 large heirloom tomatoes thinkly sliced
  • handful fresh basil
  • 8 oz burrata cheese

Instructions

  1. Arrange watermelon slices, heirloom tomato slices and avocado onto two plates.

  2. Place one ball of burrata onto the the center of each plate.

  3. Garnish with basil, basil olive oil and freshly cracked pepper and sea salt.

  4. Enjoy!
