Taco Salad Whole30 Compatible

You will love this taco salad whole 30 style!

I am excited to share with you a delicious taco salad recipe that I put together while attempting whole30. Although I usually don’t like “diets” of any kind, I recently decided to participate in thirty days of the whole30 program with some friends.  I didn’t make it through the whole 30 days but this salad became a go-to whole30 recipe that I have continued to make even while off the diet.

This salad is relatively quick to make, fresh, and delicious. If you are not doing whole30, I still recommend this salad, just add in some of your fave cheese as well…. Feel free to make any additions that you want to this salad; it would be great with jalapeno, corn, red bell pepper, olives, etc.

Ingredients for Taco Salad Whole30

Ground Beef Pasture raised organic ground beef is best in this recipe.

Olive Oil use extra virgin!

Avocado should be ripe, but not overripe and browning.

Tomatoes any variety will do, but heirloom or vine-ripened are best!

Lime should be juicy. If you are out of limes, lemon can work as a substitute.

Onion, Garlic and Cilantro add extra flavor and nutrients to this dish!

Taco Salad by Rainbow Delicious {Paleo + Whole30 Friendly}

Making this taco salad whole30 style is so simple! First, you will saute the onions and garlic in some olive oil. Next, you will add the ground beef and cook until fully browned and cook through. Set aside.

In serving bowl, add the prepared romaine lettuce, seasoned ground beef, chopped tomatoes, avocado and cilantro. Squeeze some fresh lime juice and a little olive over the top as your dressing and enjoy immediately! Add salt and pepper to taste. Serve with lime wedges on the side.

Ingredients

  • 6 C romaine lettuce chopped
  • 2 to matoes large diced
  • 2 avocados cubed
  • 1/4 red onion thinly diced
  • 1 small bunch cilantro leaves
  • 2 limes quartered
  • olive oil
  • 1 lb ground beef
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 t cumin
  • 1-2 t chili powder to taste
  • 1/2 t coriander
  • salt and pepper

Instructions

  1. Heat 1 T olive oil in skillet until bubbling and then saute onion for five minutes or until soft. Add minced garlic cloves, spices and 1 t salt and saute for another 30 seconds or until fragrant. Stir in the ground beef, breaking it up with wooden spoon until no longer pink, between 5-10 minutes. Set aside.
  2. Prepare salad by placing chopped romaine, diced tomatoes, cubed avocados, red onion and cilantro leaves in a serving bowl. drizzle lightly with olive oil.
  3. Pour the taco meat onto the salad, and generously squeeze quartered limes over the salad. Season with salt and pepper if needed.
