Spaghetti with Tomato Basil and Garlic Oil

Ingredients: Spaghetti, Olive Oil, Garlic Cloves, Cherry Tomatoes, Ciliegine Fresh Mozzarella, Fresh Basil, Black Pepper.

This is a super easy but really delicious recipe! We all loved it (although my kids may have refused to eat most of the tomatoes on their plates).  This is a great simple weeknight meal that is full of flavor. I love garlic so I added an extra clove in the olive oil.

Prep Time: 10 minutes Cook Time:  20  minutes  Total Time:  30 minutes

Ingredients:  Carrots, Parsley, Salt, Cumin, Coriander, Paprika, Cayenne, Olive Oil, Lemon Zest, Lemon Juice, Mozzarella, Tortillas, Avocado.

I was curiously skeptical about these tacos but they turned out to be awesome.  The flavor was great and we all agreed that the carrots were transformed and didn’t even taste like carrots anymore. I will definitely be making these again.

Mexican Corn Fettucine Summer Grilled Mexican Street Corn Fettuccine from Half Baked Harvest

Prep Time: 15 minutes  Cook Time: 30 minutes Total Time:  45 minutes

Ingredients: Fettuccine, Corn, Olive Oil, Butter, Lime Juice, Cilantro, Smoked Paprika, Chile Powder, Pepper, Salt, Red pepper, Onion, Jalapeno, Milk, Cream, Parmesan, Sharp White Cheddar, Basil, Bacon (optional), Cotija.

Seriously so so good! This dish was so amazing and full of flavor! I will definitely be making this again and I have decided it is one of my favorite dishes ever.  Instead of grilling my corn I just cut off the kernels and roasted them with a little salt, pepper and olive oil.  Besides that I followed the recipe pretty closely (adding extra cheese, cilantro and basil maybe…)

Ingredients: Garlic, Leek, Sweet Onion, Rigatoni, Feta Cheese, Asiago Cheese, Baby Spinach, Milk, Sun Dried Tomatoes, Heavy Cream, Butter, Olive Oil, Flour, Greek Oregano, Rosemary, Black Pepper.

A-M-A-Z-I-N-G.  Seriously, this macaroni is my favorite I’ve made so far, and that is saying something because I try a lot of macaroni recipes.My parents and some of my siblings were over for this pasta and everyone thought it was great.  My block of feta was smaller than the recipe called for so I just added extra Asiago instead. Also, I purchased  sun dried tomatoes in a bag from Trader Joe’s instead of the jarred kind in juice and maybe it’s just me but I swear the dried kind are WAY better.  I know this recipe is a labor of love but I promise it is worth it!

Blackberry Basil Fontina Sandwich Grilled Fontina + Blackberry Basil Smash Sandwiches from How Sweet It Is

Prep Time: 5 minutes  Cook Time: 10 minutes Total Time:  15 minutes

Ingredients: Multigrain Bread, Fresh Blackberries, Basil Leaves, Fontina Cheese, Olive Oil or Butter.

Yum! I always love fruity grilled cheese sandwiches and these did not disappoint! I used butter instead of olive oil and my panin press instead of a pan, and I also added a little fresh honey to the smashed blackberries.  Our blackberries were picked the day before by my kids and I near our house and they were a little tart.  Everyone loved these and I will definitely be making them again!
