Meal Plan: Fall 2015 Week 5 {Orange Week!}

In case you haven’t noticed, the weekly meal plans here at Rainbow Delicious are normally inspired by a variety of colors to help you “eat the rainbow.” I like to get a range of colorful foods from pomegranates to kale but this week I couldn’t help myself and everything is pretty much orange because I love squash.. Butternut Squash Apple Tart from The Forest Feast

Prep Time: 25 minutes Cook Time: 35 minutes Total Time: 1 hour

Ingredients: caramelized onion, rosemary, ricotta, egg, pie crust, apples, butternut squash.

This tart has it all, beautiful presentation and great flavors. It’s great with a little parmesan sprinkled on top as well.

Gluten Free Butternut Squash Lasagna from Pure Wow

Prep Time: 20 minutes Cook Time: 50 minutes Total Time: 1 hour 10 minutes

Ingredients: butternut squash, olive oil, sweet onion, garlic, spinach, ricotta, sage, nutmeg, salt, pepper, mozzarella.

I’m always skeptical of noodle-free lasagnas but this recipe is satisfying and you don’t really miss them. Be sure to let the dish sit as recommended int he recipe for at least 15 minutes after baking so it can set.

Pumpkin Fettuccine from Camille Styles 

Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes

Ingredients: olive oil, butter, garlic, heavy cream, pumpkin puree herbs de Provence (or Italian seasoning), salt and pepper, fettuccine, parmesan, fresh sage.

I make this incredibly flavorful and creamy pasta every year and the I love that it only takes about twenty minutes total and the whole family loves it. Because it is very rich it is great with veggies or a side salad to balance it out.

 Apple and Butternut Squash Soup with Bacon from Smile Sandwich 

Prep Time: 15 minutes Cooke Time: 30 minutes Total Time: 45 minutes

Ingredients: bacon, onion, apples, butternut squash, pumpkin puree, broth, ginger, salt, pepper, thyme, onion powder, garlic powder, red pepper flakes, heavy cream.

You can never go wrong with butternut apple soup, especially when bacon is involved. I used fresh ginger and loved the way this soup turned out.

Creamy Butternut Squash Pasta from Rainbow Delicious 

Prep Time: 15 minutes Cook Time: 1 hour 15 minutes Total Time: 1 hour 30 minutes

Ingredients: unsalted butter, yellow onion, butternut squash, nutmeg, fusilli (or other pasta), cream, parmesan, parsley.

This is one of the dishes that helped me fall in love with cooking and I’ve been making it for years. Trust me, it is really good and worth the effort.
