Apple Cheddar GaletteApple Cheddar Thyme Galette from Chubby Vegetarian

Prep Time: 15 minutes Cook Time:  45 minutes Total Time: 1 hour

Ingredients: Pie crust dough, lemon, butter, onions, apples, white wine, cheddar, thyme, brown sugar, salt and black pepper.

I love apples and cheese together and this is a great way to eat that combination.  If I make it again the only thing I would do differently is add juice from only half of a lemon instead of the entire lemon.  I used a pre-made crust (I’m lazy lately) but you can use your favorite home made pie dough or follow the crust recipe included.

Prep Time: 10 minutes Cook Time:  20 minutes Total Time: 30 minutes

Ingredients: Romaine lettuce, strawberries, avocados, gorgonzola, walnuts, chicken, bacon, apples, red onion, grapes, oranges. {dressing} lemon, garlic, olive oil, red wine vinegar, honey, dijon, sea salt.

This really is the best chopped salad EVER.  I loved everything about it from the variety of ingredients to the seriously amazing dressing.  If you can’t find strawberries in season right now you can substitute them with another fruit like pears of plums.  I followed the recipe exactly except for forgetting to add in oranges or red onion.  I brought it as a side dish for a family dinner party but I think it is great as a weeknight dinner as well. I plan to make this salad again and again and again.

Butternut Squash French Onion SoupFrench Onion Butternut Squash Soup with Gruyere from Cinnamon Spice and Everything Nice

Prep Time: 10 minutes Cook Time:  50 minutes Total Time: 1 hour

Ingredients: Butter, yellow onions, garlic, bay leaf, thyme, brown sugar, butternut squash, broth, gruyere, black pepper.

This is a great twist on classic french onion soup; it is a little lighter tasting without the croutons included in the recipe.  The recipee assumes you already have cooked and mashed butternut squash but you can just steam and mash the butternut squash at the same time you cook the onions.

Kale and Bacon MacaroniBaked White Cheddar Mac N Cheese with Kale and Bacon

Prep Time: 10 minutes Cook Time:  30 minutes Total Time: 40 minutes

Ingredients: Macaroni, butter, purple onion, garlic, flour, whole milk, white cheddar, parmesan, nutmeg, cayenne, black pepper, bacon or pancetta, kale, homemade croutons.

I’ve come to the conclusion that macaroni is delicious no matter what you add to it! The kale in the macaroni was a welcome addition and the bacon was obviously to die for, although I think it would be good without the bacon too if you are going meatless.  I left out the homemade croutons and added in a little swiss chard as well as the kale (I don’t necessarily advise that thought because the chard kind of turned the sauce pink-ish).

Pomegranate Arancini Goat Cheese FondutaPomegranate Arancini with Goat Cheese Fonduta

Prep Time: 15 minutes Cook Time:  45 minutes Total Time: 1 hour

Ingredients: Butter, onion, garlic, rice, white wine, stock, parmesan, egg, parsley, pomegranate, bread crumbs, goat cheese, cream or half and half, oil.

I admit that these are intimidating looking but they really aren’t very hard to make.  My kids loved them, I think especially because the were dip-able.  Adelaide did pick out the pomegranates so to make them more kid friendly you could keep some pomegranate-free, but the pomegranates were my favorite part so keep some the way the recipe suggests!  I made more than we were able to eat in one night so I froze them and enjoyed them a few nights later by baking the leftovers.
