Ideas for Dinner from House of Nash Eats

For this week’s meal plan Monday I’m excited to share ideas for dinner from House of Nash Eats: BBQ chicken cobb salad, chicken tikka masala over rice, pear pomegranate and swiss salad with poppy seed dressing, chicken avocado lime soup, and a chicken tikka masala pizza.

Amy is the former lawyer, now SAHM and in the CA Bay Area behind the food blog House of Nash Eats. She loves food, photography, books, travel, exercise, adoption and pie. She has always loved cooking and learned a lot of the basics from her mom but it really became an outlet for her during law school. It was a relaxing, creative outlet during a really intense, stressful time of her life and she loved baking treats to share with her study group. It was also during law school that her and her husband worked for law firms in Germany for a summer and then backpacked around Europe and parts of Asia, Africa and South America after taking the bar exam. The foods they tried in so many different countries really inspired her and she came home wanting to recreate some of her favorite dishes from Greece or Peru or Germany and that has really influenced her love of adventure in the kitchen.

Amy’s cooking is also influenced by the fact that both her daughters were adopted at birth. As part of adoption preparation there are “adoption education hours” required in many states and one of the things that stuck with her was that it is important to create a history for your children. One way she does that is through family food traditions and making foods that celebrate and acknowledge her daughters’ genetic heritage as well as that of her and her husband. They even took DNA tests to learn what parts of the world they each come from genetically and she has been trying out dishes from different regions for fun, which is kind of a cool way to explore their history!

Ideas for Dinner BBQ hChicken Cobb Salad
BBQ Chicken Cobb Salad from House of Nash Eats

Ingredients: romaine, chicken, bbq sauce, bacon, avocado, cheddar, hard boiled eggs, Roma tomatoes, red onion, ranch or blue cheese dressing.

I’m a sucker for a good Cobb salad and love that this one has BBQ chicken added into the mix. I hate making hard boiled eggs, so I cheat and buy pre-hard boiled eggs from Trader Joes.

Ideas for DInner Chicken Tikka Masala

Chicken Tikka Masala from House of Nash Eats

Ingredients: yogurt, lemon juice, cayenne, cumin, black pepper, cinnamon, garam masala, ginger, salt, chicken breasts, butter, garlic, coriander, paprika, salt, tomato sauce, heavy cream, cilantro, naan, rice.

Tikka Masala is one of my favorite dishes! If you are worried about this being too spicy just cut down on the cayenne pepper to tone down the heat. Be sure to save a little leftovers for the pizza recipe below!

Pear Pomegranate and Swiss Cheese Salad with Poppy Seed Dressing from house of Nash Eats

Ingredients: poppy seed dressing (sugar, dry mustard, salt, apple cider vinegar, vegetable oil, grated onion, poppy seeds), romaine, pomegranate, pear, pecans, swiss.

This salad combines unique ingredients: pomegranate, pear, pecans and swiss cheese! There are instructions to make your own poppy seed dressing but if you are in a hurry you could also buy your favorite poppy seed dressing.

Ideas for Dinner Chicken Avocado Lime Soup
Chicken Avocado Lime Soup from House of Nash Eats

Ingredients: olive oil, green onions, jalapeno, garlic, chicken broth, water, chicken breasts, Roma tomatoes, cumin, oregano, coriander, salt and pepper, radishes, chopped cilantro, lime juice, avocados.

You can’t go wrong with a chicken, lime and avocado combination! This soup is ready in a half hour and you can have fun dressing up this soup with tortilla chips, sour cream or shredded cheese.

Ideas for Dinner Chicken Tikka Masala PizzaChicken Masala Pizza from House of Nash Eats

Ingredients: pizza dough, chicken tikka masala (recipe from above), red onion, cilantro, mozzarella cheese.

Save a little chicken tikka masala from the recipe above and you have a quick weeknight dinner… Just roll out the dough and top with leftover chicken tikka masala, red onion, mozzarella cheese, and cilantro. Perfection!

There are quite a few that I definitely wouldn’t mind whipping up in my kitchen such as the Cobb Salad (I lived off of these salads during my hard core low carb days) and the chicken tikka masala. . .something I ate a lot of while living in Kenya (there is a large Indian presence there).
