These are some of my favorites to prepare when the weather warms up, I have made each recipe more than once and am excited to share them with you. Arugula Salad with Nectarines and Tomatoes from Pamela Salzman

Prep Time: 10 minutes Cook Time 5 minutes (if you reduce balsamic yourself) Total Time: 15 minutes

Ingredients: arugula, white balsamic vinegar {aged}, olive oil, sea salt, nectarines, tomatoes, fresh mozzarella, balsamic vinegar.

This salad is SO summery, fresh and full of flavor. The recipe recommends using aged balsamic but I didn’t have that so I just reduced white balsamic vinegar myself and left out the regular balsamic and wow, was it good. I like to use a variety of heirloom tomatoes, peaches or nectarines, and a little fresh basil as a garnish. I can’t say enough good things about this salad; I’m really into stone fruit +tomatoes. (*** this recipe has been taken down from Pamela’s site for the time being, but you still really should make it. It is one of those dishes you really don’t need much instruction on, and it is so so good!)

Honey Glazed Salmon from Damn Delicious

Prep Time: 10 minutes Cook Time 20 minutes Total Time: 30 minutes

Ingredients: salmon filets, black pepper, all-purpose flour, honey, olive oil, lime zest, unsalted butter, garlic, salt.

I don’t eat fish as much as I should but after having this salmon recipe I’m going to try to increase my fish intake; it is so good! My sister made this recipe and shared with me and everything about it was perfect. We had this simple strawberry goat cheese spinach salad on the side- it was a great combo.

Sweet Corn Zucchini Pie from Pinch of Yum

Prep Time: 10 minutes Cook Time 30 minutes Total Time: 40 minutes

Ingredients: butter, yellow onion, sweet corn, zucchini, sliced mushrooms, dried basil, dried oregano, salt, shredded cheese, eggs.

This recipe is a great weeknight meal- it is simple and even the kids enjoyed it. I add two more eggs and fresh basil on top.

Prep Time: 45 minutes Cook Time 1 hour Total Time:1 hour 45 minutes

Ingredients: butter, yellow onion, sweet corn, zucchini, sliced mushrooms, dried basil, dried oregano, salt, shredded cheese, eggs.

I love these enchiladas! Hands down my favorite enchiladas I’ve made in a while (and I’m a little obsessed with enchiladas, and make them frequently). It’s the sauce that made these so amazing; next time I make this recipe I think I will double the sauce so they are swimming in the deliciousness.We made two batches- one with corn and one with flour tortillas, and they were both good but the corn tortillas were the clear favorite.

Blackberry Basil Salad from Feasting at Home

Prep Time: 10 minutes  Total Time: 10 minutes

Ingredients: baby spinach or arugula, red onion, blackerries, goat cheese, silvered almonds, basil leaves, chive or onion blossoms {optional}, balsamic vinegar, salt and pepper, olive oil, honey.

This salad comes together in no time and tastes like summer. I went a little crazy on the basil but I think the combo of blackberries and basil is what makes this salad so delicious. I use white balsamic and leave out the optional chives. This is a great side salad, potluck addition or light lunch.

  10. I’ve been trying to schedule timeslots for things, too. =) I just have problems figuring out what my biggest priorities are. It’s also hard when I can’t predict how long my toddler will sleep! Those enchiladas look amazing, too.

    • It’s so much easier said than done…I’m not an expert but I’m noticing positive benefits just from trying! Also, I get the impression that most people who write “scheduling advice” articles are not staying at home with their kids; each day is filled with surprises with toddlers! Schedule in some time for those enchiladas, you won’t regret it 🙂
