I don’t make a lot of breads, but I had some soft bananas that I didn’t want to waste and decided to make this cinnamon crumb banana bread. I was not disappointed… it was more like coffee cake than your typical banana bread and the whole family loved it. I think this will be my go-to recipe for bad bananas although next time I might experiment with adding slightly less sugar, it was definitely sweet, but no one complained 😉
Bread Ingredients:1 egg 1 C sugar 1 stick unsalted butter, at room temperature 1 t vanilla 1/2 C buttermilk 2 overripe bananas, mashed 2 C all purpose flour 1/2 t salt 1/2 t baking soda 1 t baking powder 1 t cinnamon
Crumb Topping:1/2 C powdered sugar 1/2 C all purpose flour 4 T unsalted butter, melted 1/2 t cinnamon pinch of salt
