Health Benefits

Sweet potatoes are kind of a superfood and this makes me happy because I love to eat them, don’t you? Sweet potatoes are high in fiber and are a rich source of powerful carotenoid antioxidants like beta-carotene.  They are loaded with vitamin A, potassium, and even have a little calcium.  Sweet potatoes also contain phytochemicals like quercetin, which is a powerful anti-inflammatory. Sweet potatoes are also a good source of iron.

Note: Sweet potatoes are not the ideal food choice for individuals with blood sugar problems because of their high glycemic load.  Individuals with diabetes or blood sugar issues might prefer to limit eating them in reasonable amounts with other vegetables and proteins.

Interesting Facts

Sweet Potatoes are not actually related to the potato.  They are also one of the oldest vegetables known to man and have been around since prehistoric times.

In Season & Storage

Sweet Potatoes are typically in season from September through January.  In a dark, dry, and cool place they can last for up to four weeks, but it is best to use your sweet potatoes the week you purchase them and not to refrigerate them.   Apparently you can store sweet potatoes in your freezer, packed in an airtight container, with 1/2 inch headroom for up to one year.

Sweet Potato Burrito Smothered in Avocado Salsa Verde was featured in Winter 2013 Week 3 and it is just one of those recipes that everybody loves.  I have had several friends make this recipe and every single one has loved it.

Sweet Potato Chili is such a unique chili recipe that I absolutely loved and featured in the Fall 2012 Week 8 meal plan.

Maple Whipped Sweet Potatoes seem like they would be a great side for Thanksgiving.
