Sweet potatoes are kind of a superfood and this makes me happy because I love to eat them, don’t you? Sweet potatoes are high in fiber and are a rich source of powerful carotenoid antioxidants like beta-carotene. They are loaded with vitamin A, potassium, and even have a little calcium. Sweet potatoes also contain phytochemicals like quercetin, which is a powerful anti-inflammatory. Sweet potatoes are also a good source of iron.

In a dark, dry, and cool place they can last for up to four weeks, but it is best to use your sweet potatoes the week you purchase them and not to refrigerate them.
