Delicious Winter Menu with Grocery List

Happy New Year! To start off 2017 today I’m sharing some of my all-time favorite winter recipes from amazing bloggers that I’ve shared during the last few years for Meal Plan Mondays.  Featured in this delicious winter menu with grocery list are two salads, one soup, a sandwich, and of course macaroni and cheese. Delicious Winter Menu with Grocery List

Sweet Potato & Pomegranate Salad from Love & Lemons

Prep Time: 10 minutes Cook Time:  25  minutes  Total Time:  35 minutes

Ingredients:  Sweet Potatoes Baby Salad Greens, Pomegranate Seeds, Crumbled Feta,  Pistachios, Cilantro, Scallions, Olive Oil, Garlic, Honey, Sherry or White Wine Vinegar, Salt & Pepper.

This Salad was seriously so so good.  Rick is not usually too enthusiastic about salads but ate serving after serving and said it was the best salad he’s ever had.  I will definitely be making this for him again.  I followed the recipe pretty much exactly except I may have put just a little extra honey.

Hearty Chicken Stew with Butternut Squash and Quinoa from Cooking Canuck 

Prep Time: 10 minutes Cook Time:  45  minutes  Total Time:  55 minutes

Ingredients:  Butternut Squash, Chicken Broth, Boneless & Skinless Chicken Thighs, Olive Oil, Yellow Onion, Salt Garlic, Oregano, Petite Diced Tomatoes, Quinoa, Kalamata Olives, Black Pepper, Parsley.

This soup is slow-cooker friendly!

I really liked this soup and followed a suggestion from the comments section to just put everything in my slow cooker and cook for 4ish hours on high.  I stirred in Parsley at the end and pureed some squash ahead of time.  Keep extra broth on hand because it does get a little thick as the quinoa expands; wait to add the quinoa until 20 minutes before eating so it won’t expand quite so much.

Grilled Cheese with Caramelized Onions and Spinach from Simply Reem

Prep Time: 10 minutes Cook Time:  45  minutes  Total Time:  55 minutes

Ingredients:  Sourdough Bread, Butter, Mayonnaise {or extra butter}, Spinach Leaves, Red Pepper Flakes Cheddar Cheese, Red Onions, Oil, Salt & Pepper.

I love trying new variations of grilled cheese sandwiches and this one was awesome.  I used extra butter instead of mayonnaise and omitted the red pepper flakes.  I also used yellow onion instead of red onions and of course added a little bit of honey in while I caramelized them.  Yum.

Spinach Macaroni and Cheese by Donna Hay

Prep Time: 10 minutes Cook Time:  25  minutes  Total Time:  35 minutes

Ingredients:  Macaroni, Milk Cream, Cheddar, Dijon, Black Pepper, Spinach.

Talk about the simplest macaroni and cheese ever (besides boxed I guess).  Our whole family enjoys this simple and delicious macaroni and cheese dish.  It is a great dish for when you just don’t want to deal with trying to talk your kids intro trying what you made for dinner.

 

Rainbow Chicken Salad with Almond Honey Mustard Dressing from Pinch of Yum

Prep Time: 10 minutes Cook Time:  10 minutes  Total Time:  20 minutes

Ingredients:  Olive Oil, Chicken Breasts, Salt, Pepper, Chili Powder, Grapes, Blueberries, Curly Lettuce, Feta Cheese, Almonds, Almond Butter, Orange Juice, Stoneground Mustard, Raw Honey, Garlic.

This salad is delicious, and the dressing is unique, rich and creamy.  It is quick to prepare and is great as a weeknight dinner or as a side or potluck dish.  I will definitely be making this salad again.

  1. This weeks menu is awesome! Colette has quite a few allergies that limit what I can make but I’m going to try two of these dishes this week, I would do all of them if she didn’t have limitations. Thank you for the great ideas!

  2. This is a great winter menu! I tend to throw anything and everything I have in the fridge together for dinner, but I really should think about doing some meal planning and prep to save time ;D

    • Thank you Tina! We throw together pantry-fridge dinners often too, both planned meals and creative eat-what-you-have dinners are great, as long as we get to eat! 🙂

  3. So I thought for sure my fave would be the sweet potato salad, but then I kept scrolling down, and they all just look and sound so good that I cannot possibly choose a favorite, and will therefore have to make them all! This is an awesome round up…thank you!

  4. Thank you for these eating the rainbow recipes! I usually just end up being good about that for lunch and that soup looks mighty yummy. Glad to know it’s crockpot friendly – I picked one up at the end of last year and it’s something I’m trying to use more.
