I’m excited to share this week’s chicken dinner recipes meal plan featuring Whisk it Real Gud. Self care and meal planning seems pretty important right now. What a stressful week with the election, right?! I’m exhausted and am ready to move forward for causes that matter to me, like inclusivity, justice and kindness. I need to stop eating my feelings and start eating foods that are good for me; good-bye Ben & Jerry’s (I honestly ate an entire pint one night this week, yikes) and hello delicious chicken dinner recipes from April Boller of Whisk it Real Gud.

April is a mom and wife who loves cooking easy simple delicious meals. In the past she loved to cook every now and then but for the most part, she dined out more than she cooked. One day she decided to stop wasting money and cook her own meals instead. Since then, cooking and baking has sparked a huge passion. April’s love for cooking grows more and more each day. She love blogging, photography and is also a beauty junkie. She loves spending tons of time with my kids and hubby. April’s guilty pleasure is brownies; she admits she can actually eat an entire pan of them in one sitting! (<– My kind of person!)

Chicken Dinner Recipes Meal Plan Hawaiin Style Maple Shoyu ChickenHawaiian Style Maple Chicken from Whisk it Real Gud

Prep Time: 5 minutes Cook Time: 45 minutes Total Time: 50 minutes

Ingredients: chicken thighs, soy sauce, Worcestershire sauce, sugar, garlic powder, white vinegar, ginger, chili powder, maple syrup, water, flour or cornstarch.Optional: pineapple + rice.

I try to avoid cooking with sugar but sometimes it is just worth it. I totally order chicken dishes when I’m out that have sugar so I figure it is okay to include sugar in a chicken dish at home from time to time! I recommend serving as pictured with fresh pineapple and over rice.

Prep Time: marinate overnight Cook Time: 1 hour

Ingredients: chicken leg quarters, fresh ginger, lemon, garlic, onion, coconut oil, orange bell pepper, rice.

I love recipes where you marinate ahead of time because then when it comes time to cook most of the prep work is done. You could slice up the bell pepper too so you are completely prepared. It is recommended to serve this chicken over rice.

Chicken Dinner REcipes One Pot Cider BRaised Chicken with Leek SauceOne-Pot Cider Braised Chicken Thighs with Leek Sauce from Whisk it Real Gud

Ingredients: vegetable oil, chicken thighs, salt, pepper, leeks, flour, apple cider vinegar, apple cider juice, chicken stock, unsalted butter, thyme.

I was curious if my family would like this recipe given the large amount of apple cider vinegar in the sauce and I was pleasantly surprised that my entire family really enjoyed it! I served it with roasted veggies on the side and there were no leftovers even! I used cornstarch instead of flour for thickening the sauce.

Prep Time: 8 minutes Cook Time: 40 minutes Total Time: 48 minutes

Ingredients: chicken thighs, smoked paprika, celery salt, garlic seasoning, vegetable oil, mushrooms, leek, broccoli florets, unsalted butter, heavy whipping cream, unsalted butter, parmesan, lemon pepper seasoning.

This is pure comfort food but I love that it is also loaded with veggies- leeks, broccoli and mushrooms. My kids are always a fan of pasta recipes with a cream base like this.

Chicken Dinner Recipes Vietnamese Caramel ChickenVietnamese Caramel Chicken from Whisk it Real Gud

Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes

Ingredients: chicken thighs, salt, pepper, cayenne. ginger, yellow onion, garlic, fresh ginger, rice vinegar, fish sauce, soy sauce, brown sugar, lime juice, green onions, vegetable oil.

If you like a lot of sauce then double the sauce portion of this recipe! This is another example of giving in to a little sugar in the recipe for a good cause! The name fish sauce grosses me out but it really does add great flavor to recipes like this and is nice to have on hand.
