I’m so excited to share this week’s amazing salad recipes meal plan with Dinner at Zoo recipes.

Sara, the creator of Dinner at the Zoo originally started food blogging back in the olden days of 2006 when blogging was a new thing and most forms of social media didn’t exist yet! She took a long break after she had 3 kids in 2 years and launched a new site about 1.5 years ago called Dinner at the Zoo, which is focused around creating easy meal solutions that are family friendly. In addition to the blog and chasing after her kids, she runs a food photography and social media management company. I’m totally in love with her recipes and especially her food photography and I hope you enjoy her recipes as much as I do!

Prep Time: 25 minutes Cook Time: 35 minutes Total Time: 55 minutes

Ingredients: chicken breasts, olive oil, lime juice, sugar, salt, cumin, garlic, dried oregano, smoked paprika, onion powder, chili powder, flour tortillas, cooking spray, lettuce, cheese, olives, sour cream, pico de gallo, avocado, beans (can make cantina beans), cilantro, honey, green salsa.

Taco salads are a big hit in my family, and I especially love how this recipe includes a tortilla bowl (that is easier to make than it appears). You can add whatever extras you want to make this fit your tastes but I like it exactly how it is! You can make the cantina beans linked or just use black or refried beans.

Prep Time: 15 minutes Cook Time: 25 minutes  Total Time: 40 minutes

Ingredients: spinach, fresh figs, acorn squash, olive oil, honey, cooking spray, candied pecans, blue cheese, balsamic vinegar, dijon mustard.

You’ve got to make this delicious and easy-to-make fig salad during fig season! The flavor combo of figs, roasted squash, blue cheese and candied pecans is pretty much heaven.If you have difficulty finding figs or squash right now then this would taste really good substituted with other fruits!

Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes

Ingredients: quinoa, cucumbers, cherry tomatoes, diced yellow bell pepper, red onion, feta cheese, kalamata olives, pine nuts, parsley, olive oil, dijon, red wine vinegar, lemon juice, garlic powder, onion powder, dried oregano.

This is the perfect salad for when you want to have something filling but still really healthy. Lately I cook my quinoa like pasta-I add it to salted boiling water and then drain and rinse when it is finished.

Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes

Ingredients: tuscan kale, olive oil, lemon juice, chicken breast, tomatoes, avocado, feta, almonds.

This salad is so simple to put together and makes a great lunch or dinner salad. So fresh, healthy and filling.

Prep Time: 15 minutes Total Time: 15 minutes

Ingredients: romaine, cotija, tomatoes, black beans, tortilla strips or chips, avocado, pepitas, lime, cilantro, mild green chile, garlic, honey, olive oil, red wine vinegar, sour cream.

This vegetarian salad recipe is so flavorful, I especially love the addition of pepitas + cotija. I use sour cream instead of mayo for the dressing.
