Happy meal plan Monday! I’m so excited to share with you a week of simple vegetarian recipes from The Forest Feast, by Erin Gleason. Erin left NYC for a cabin in the woods in CA which prompted her to start a food blog. Her background is in food photography, so she has always had an emphasis on the visuals. Her blog has now blossomed into 3 cookbooks (The Forest Feast + The Forest Feast for Kids + Forest Feast Gatherings) and a line of stationery items ( meal planner & shopping list + notebook set) that also feature her watercolor illustrations.

The Forest Feast is one of my all-time favorite food blogs because it combines art and food so beautifully.  Three of the recipes in this week’s meal plan are from her newest illustrated cookbook, Forest Feast Gatherings, which is filled with simple vegetarian recipes for relaxed entertaining. It is pretty enough to be a coffee table book but practical enough to pull recipes from for hosting dinner parties. The gorgeous recipes are seasonal, veggie-centric and best of all, easy to prepare. I honestly can’t get enough of what Erin is serving up and hope you enjoy her gorgeous recipes and art as well!

A Week of Simple Vegetarian Recipes from The Forest Feast Butternut CapreseButternut Caprese from The Forest Feast

Ingredients: butternut squash, olive oil, salt and pepper, avocado, cherry tomatoes, basil, smoked mozzarella.

I’m always down for unique caprese recipes and this one is perfect for early Fall. The addition of roasted butternut squash and avocado is delicious. I use regular mozzarella instead of smoked and it is still fab.

Ingredients: acorn squash, marinara sauce, no-boil lasagna noodles, ricotta, scallions, sage, mozzarella, salt, pepper, garlic powder.

You can’t go wrong with lasagna in the Fall… filling, delicious and makes amazing leftovers.

Ingredients: orzo, red onion, black beans, red bell pepper, corn, cilantro, olive oil, lime, salt, pepper.

This is a perfect salad for entertaining or even for an easy weeknight dinner or lunch. I made it with quinoa instead of orzo and it was great!

Ingredients: puff pastry, fig jam, pears, walnuts, gorgonzola cheese, thyme, butter, honey.

I’m a big fan of savory and sweet galettes but this is the first recipe I’ve seen that uses puff pastry as the crust and I think it is brilliant! The flavor combination of fig jam, pears, thyme and gorgonzola is on point.

Ingredients: red potatoes, chard leaves, eggs, olive oil.

I recommend using a mandoline to slice the potatoes uniformly and thin. I love that this recipe is so simple with only four ingredients.
